For 4 persons
8 patties or shortbread biscuits
1 litre of UHT whole milk
6 drops of rennet
1 tablespoon of commercial white cheese (in cheese drainer)
2 tablespoons of powdered sugar
A tray of raspberries
A tray of blueberries
A tray of blackberries
A tray of redcurrants
Make your white cheese serac the previous day:
Mix the white cheese forcefully with UHT whole milk.
Add 6 drops of rennet and mix gently.
Pour out the mixture in the large cheese drainer of the cheese maker.
Start the cheese maker for 12h of heating.
Once the cycle is complete, remove the cheese drainer and empty the whey
contained in the jar. Put the cheese drainer in the high cheese draining position
until it is time to serve.
A little before serving, mix forcefully the white cheese with the powdered sugar
in a large container. Crush the shortbread biscuits then place them at the bottom
of each of the verrines. Add sweet white cheese then the red berries.
You can supplement with a coulis of red berries served separately or over the berries.
